Guatemala coffee

The Coffee of today is a Guatemala 🇬🇹 coffee. I made it as a cappuccino. So normally when I try out a new coffee I first try out an espresso shot . I used 22 grams for a 350 ml cup of coffee. After pouring the espresso shot I stirred it with a teaspoon and tasted the espresso . The espresso had a wood not to it . Very smooth so which I New the grind setting was good . It had a fruity taste as well combined with a bit of chocolate sent lingering on my palate . I than frothed my milk and made it in to a cappuccino. It was strong , not bitter , but that wood note was there slightly . It was my first time experience the Guatemala coffee bean so I am going to try break down the flavor and see deeper in to it . The flavor stands out pretty well . I feel I filled my puck to much for the 350 ml cup and try 1 gram or 2 gram less of coffee for the next cup I make .

Update: i made the second cup with less coffee and it was not so strong as my first one, the woody taste was not there as much it had medium acidity, fruity and felt so full. A BEAUTIFUL BEAN I MUST SAY. not my first choice but my 4th choice in terms if i was to order a coffee.

Hot chocolate bombs

So we tried to do a bit of fun stuff and make ice cream shape hot chocolate bombs that you can mix in to your hot milk . It was a first try out thing . So each chocolate ice cream shaped bomb has a mixture for a 200-250 ml cup of milk . We actually used three types of chocolate with marshmallows on tops .

We used a hot chocolate powder with with a dark chocolate sauce and Cadbury chocolate as a coating . Not a thin coating as the mixture was filled in side and we do not want it to spill out . Now if you read my mocha blog then you know that Cadbury chocolate does not mix well with hott milk and you get chocolate pieces that stick to the bottom. But we used it as it is easy to mold and it holds the mixture together . This is a first time thing and we are glad to have a number of order sold ... as long as the hot chocolate is there taste is beautiful and rich with chocolate we know the customers will be happy with this ..We will definitely work on finding a good molding chocolate and the ingredients to find a good balance but so far it is really good . Everything is really home made and we always love trying out new and crazy things we find online and ideas given to us by people .


Valentine’s Day milk shake Update

So in my previous post I showed off my new drink and as well advertised it out strawberry 🍓 milkshake with chocolate sauce , the perfect romantic milkshake I feel , I got a good response to the flavors and how it came out . A few people even posted it on their Instagram which was exciting see.

I love it when people enjoy my milkshakes ! I am just going to create a poster now to put it up as it is now going to go on for the whole month only . I will be placing it on the menu every Valentine’s Day Month, and maybe have another optional coffee Valentine’s Day drink as well .


Coffee shop errors, I learnt from

Running a coffee shop we do make errors in terms of how we go about things and the few errors I know I have made is stuff i can learn from / we can learn from . One is equipment, having the right equipment is so critical, and it will make your life running the shop so much easier . In the beginning I though all stuff did the same thing . For example a Russel Hobbs espresso machine is so much cheaper and it make an espresso , and it froths milk really well . Yes it does all those things but how and what quality does it produce your espresso . Grinders as well , we can pick up cheap grinders and just grind coffer but at what cost and quality are you sacrificing of making a good coffee . We all know grinders can be expensive like the coffee machines but understanding quality and good coffee all that cash you spent on the expensive machinery , it will pay for it self in long run by you being able to make coffee good and accurately . There is only so much a home machine can take before it breaks and you will have to replace it over and over again . Save up for quality and push for quality machinery that will help you produce the best coffee you could ever. The biggest risk you took was opening up a shop and investing time, energy and money in to it . So I learnt to take “good “ calculated risks in terms of the machinery . If you want go big .. then go big and carry on the risk. No one has ever became successful with out risks ..

Procedures is a very important one . Having procedures helps the coffee shop run smoothly . My coffee shop is not soooooo big . So procedures are required so the cooking is not bumping in to the coffee making sections . Getting stuff ready before hand and making sure each section is clean and neat is part of procedures which help you run smoothly. So far I have divided my shop in to two . On section for coffee , the next section for cold drinks such as milkshakes , then the next section for cooking . Having it that ways helps a lot especially on busy days so no one is bumping in to any one on busy days .. we want out orders ready and to be out for our customers .and having the right equipment works hand in hand as the equipment helps minimizing the time it will take to get stuff done .


Retailing coffee

So I’ve managed to get a supplier finally for retailing coffee and I must say it took a lot of time , I made a bulk buy of Brazilian , Guatemala , Kenya , Nicaragua coffee Beans and grounded filtered coffee beans. Basically I’m going to start off small and push out those bags of coffee at the same time use those coffee bags as well . And if people enjoy what they drinking they most welcome to buy a bag . I found a roaster and since they do not have such a large variety but their price is good . I will definitely continue on looking for other suppliers and bulk buy from them . This is the beginning stage of retailing coffee so I’m starting of small. Not to small but a good amount then build from their .

Like I said as much as you have a goal , there should always be a start . This is just one step to me becoming my own roaster and supplier of coffee beans . So far it is all about all the knowledge I can get and fill in my head , about packing , roasting and as well the best equipment and raw I will definitely be sure to show you how it comes and the packaging forthwith coffee !! And give you an update when it has arrived! The only one or two items I would love to retail as well is Pour Overs and gone coffee grinders . I feel the coffee bean , a pour over and a grinder is a whole starter package for those that want to brew their own coffee . Not many people have grinders at home so they buy already filter grounded bags of coffee which I would love to teach them and show them about how to go about it . At the same time I will be learning on the way . I feel if your read my blogs before you know my perspective of already ground coffee . beans supplier . Who knows my goal is to open up another shop later around you even maybe . We will see where fate takes us.


Tuesday is the day

I have not got my coffee machine back yet . But I was promised on Tuesday , touch wood / cross my fingers . A few minor things which had to be altered . Like the pump has to sit out side the machine as the reasons up on why the last pump was not working because it was so close to the boiler and had no casings due to it not being an original pump , So the one I got is still not an original pump but it works and is a bit to big for it to fit in the machine and the last thing I want is a problem with the pump again . The whole wiring was altered as well so the other buttons do not work, the guy that worked on that machine had changed it and placed a switch and changed the switch boards . Reasons why , I have no idea . But when the machine gets back I will start asking questions upon the machine so I can learn more about the machine . I really just want it back now , and I know it takes time to fix and solve all the problems. I feel like a kid that gets a present 🎁 on Christmas Day and your all excited to play with it but you open it and it’s broken now you have to send it back and wait for a new one . I really want to just make my first espresso coffee with the machine really , and get use to it and see how I am going to place it in my shop. Expenses and more expenses when it come to maintaining and fixing coffee machines . Here is South Africa it can be difficult to get machine parts and sauce out stuff that is why picking the correct machines is very important. The most commonly used machine I will say that I know people enjoy using here is a simonelli . Finding good parts can be easy for them as most baristas that I know use them .


Your favorite type of coffee

I definitely know my favorite type of coffee and that is a Burundi 🇧🇮 medium roast coffee and as well as Central Africa / Great Lakes ? But I am interesting in what is your favorite type of coffee of origin or blend .. and how do you like it . As a dark roast or light roast .. be sure to let me know in the comments I am interested in what everyone’s preferences of coffee is . And how do you prefer it to be served to you, as in the method of brewing it . I know there are so many types of way that you can enjoy your caffeine fix and i hope to hear the way you like it.
