Sweet Rice & Dry Fruit Delight – A Healthy Treat for Special Occasions

Hello friends! Warm wishes to you all. On this special Sunday, I’m excited to share a delightful sweet recipe with you that not only tastes amazing but is also incredibly healthy. It’s a favorite in my family, loved by both kids and adults alike. I hope you’ll enjoy it as much as we do!

Ingredients:

½ cup rice

2 tablespoons ghee (clarified butter)

1 liter milk

2 green cardamoms

Sugar (as per taste)

Mixed dry fruits (almonds, cashews, pistachios, etc.)

A few drops of kewra essence (optional)

Chironji (optional, for garnish)

Preparation:

First, wash the rice thoroughly and drain the water. Spread the rice out and let it dry completely. Once dry, grind it into a coarse powder, similar to semolina (suji).
While grinding the rice, don't forget to add two green cardamoms for the fragrant aroma.

To make this dish even more nutritious, you can add dry fruits. If your kids aren’t fond of eating whole nuts (just like mine!), simply grind them into a fine powder and mix them with the rice. This way, the goodness of dry fruits blends seamlessly into the dessert without being noticeable while eating.

Cooking Process:

In a heavy-bottomed pan, heat 2 tablespoons of ghee.

Add the ground rice and dry fruit powder.

Roast on medium flame until the mixture turns a light golden brown and releases a nutty aroma.

Pour in 1 liter of milk and stir continuously on high flame to avoid lumps.

Once it starts boiling, reduce the heat and let it simmer, stirring occasionally.

After 7-8 minutes of slow cooking, add sugar as per your taste.

Continue cooking on medium flame for another 3-4 minutes until it thickens to your desired consistency.
Turn off the heat and add a few drops of kewra essence for that extra aromatic touch.

Pour the sweet dish into bowls.Garnish with chironji if desired (though it’s completely optional and won’t affect the taste if skipped).

Allow it to cool down completely. Trust me, the flavors deepen as it cools, making it even more delicious. Once chilled, serve and enjoy the rich, creamy, and healthy treat with your loved ones!
