Hello Everyone, hope you guys are doing good.

I want to write about this week third Edition topic which is "Your Favorite Food".

Food is one of the most vital needs of life, we cannot do without it because this is where nutrients required by the body is gotten from.

Each nations and tribes have their own different kinds of food and how they prepare it.

We eat all kinds food, but there are some food we never get tired of eating, we always want more of this food, this food is known as our favorite.

I want to talk about my favorite food which I love to eat so much and how to prepare it, hope you will love it.

Ghana Jollof Rice

Jollof Rice is one of the common dish Africa especially in West Africa, the name being derived from Djolof/Wolof people of Senegal.

Jollof is also best described as a "reddish one-pot dish.

Ghana is known as one of the home of delicious dishes in Africa, and their Jollof rice is not exempted.
Jollof rice is common in West Africa but Ghana jollof recipe have it's own special ingredients, preparation and procedures that differentiate it from other countries Jollof.

Ghanaians always prefer the plump to long rice such as Basmati or Thai jasmine rice.

Ghana Jollof Recipe

Ingredients

  • 6 oz tomato paste, 1 can
  • 14 oz tomato, 2 cans
  • 2 large yellow onions, chopprd roughly, 1/3 cup of vegetable oil, plus 2 tablespoons
  • 2 teaspoons of curry powder
  • 1 habanero pepper
  • 1 teaspoon of garlic powder
  • 1 teaspoon of grounded ginger
  • 1 cup of frozen mixed vegetable (150 g)
  • 3 chicken bouillon cubes, crushed
  • 1 and 1/2 teaspoon mixed dried herbs
  • 2 and 1/2 cups of lonh grain rice(500g), rinsed.
  • 1 and 1/2 cups of water (360mL)

Preparation

Step 1: Add onions and 2 tablespoons of oil to a blender and pulse untill it is smooth and transfer to a separate bowl.

Step 2: Add diced tomatoes, tomato paste, and habanero pepper to the blender, and also pulse untill it is smooth, Transfer to a separate bowl.

Step 3: Heat 1/3 cup of vegetable oil remaining in a heavy-medium pot over medium heat.

Step 4: Once the oil is shimmering, add the onion and cook untill the water had cooked out and the onion puree is starting to brown, it should be for about 8-10 minutes.

Step 5: Stir the tomatoes and add curry powder, garlic powder, ginger, dried herbs, and crushed bouillon cubes. Cook for 20-30 minutes stirring occasionally, untill stew has reduced by almost half and is deep red color.

Step 6: You can now add the rice, mixed vegetables, and water. Allow to boil, reduce the heat low and cover the pot with foil. Leave it to boil for another 30 minutes, and until the rice is cooked through and the liquid has been absorbed by the rice. Put it down and serve

Yummy to eat

I have never tasted this Ghana Jollof before, but I have heard tales from those who have done so. And they are quite impressive.
I would really love to have a taste of it someday, who knows, it might become my favorite food.
