Sunday delight - Poori-Sabji with Aamras

Today I am sharing with you about my Sunday Special Meal - Poori, Aloo Sabji, Bhindi Fry and Aamras. (Deep Fried flour bread, Spiced dry potatoes, Crispy Okra with Mango Shake)

This is the favourite food combination of my whole family and as the mango season started, my son requested to prepare Poori, Aloo sabji and Aamras when we had some guests came over. Request for Bhindi fry came from my husband's side.

Come along with me and lets prepare all the dishes. As these are multiple dishes, I will share the preparation of all the dishes one by one.

First of all I will share the preparation of - Aloo Sabji (Spiced Dry Potatoes).

Ingredients :

  1. Boiled Potatoes - 8 Nos.
  2. Green Chillies - 5/6 Nos.
  3. Curry Leaves - 15-20 Leaves
  4. Oil for cooking - 3 Tablespoon
  5. Mustard Seeds - 1/2 Teaspoon
  6. Turmeric Powder - 1 Teaspoon
  7. Red Chili Powder - 1 Teaspoon
  8. Garam Masala - 1/2 Teaspoon
  9. Salt - As per the taste
  10. Fresh Coriander leaves

Process

Cut boil potatoes in bite size pieces.

Heat oil in a pan. Once the oil is hot, add mustard Seeds to tempering.

Add chopped green chillies and then fresh curry leaves.

When green chillies and curry leaves are fried, add turmeric powder into it.

Add chopped boiled potatoes into it anx mix well.

Add red chili powder and garam masala and salt. Mix well to combine everything together.

Aloo sabji is almost ready. Lastly add fresh chopped coriander leaves in the potatoes and its ready.

Next we will prepare the Bhindi Fry (Spicy Crispy Ocra).

Ingredients :

  1. Bhindi (Okra)
  2. Besan (Gram Flour)
  3. Oil for cooking - 3 Tablespoon
  4. Cumin Seeds - 1/2 Teaspoon
  5. Turmeric Powder - 1 Teaspoon
  6. Red Chili Powder - 1 Teaspoon
  7. Garam Masala - 1/2 Teaspoon
  8. Salt - As per the taste
  9. Whole Green chillies - 5-6 Nos.

Process

First of all wash the okra, dry it and cut into inch size pieces after give it a cut on the sides.

Add the gram flour and all the spices in the okra pieces.

Mix everything so that okra get well coated with gram flour and spices.

Heat the oil in the pan and add cumin seeds for tempering. We will prepare Bhindi in the same pan we prepare Aloo

Make a slit on the sides of the chillies and put it in the oil.

Add okra in the pan and mix well. Keep the flame high as we have to make the okra crispy.

Stir it continuously so that it don't get burned as we are cooking it on high flame. It will be cooked in 7-8 minutes and the colour will change to brown.

Bhindi fry is ready. Now we will prepare Aamras (Mango Shake).

Ingredients :

  1. Ripe Mangoes - 6 Nos
  2. Fresh Milk : 250 ML
  3. Sugar : As per required sweetness
  4. Water : To Adjust the consistency

Process

Take 6 ripe mangoes. I took Alphonse mangoes but this can be prepare with any mango.

Today I am preparing the Aamras with traditional procedure.

Press mangoes from all sides in such a way that mangoes become soft. Now take the pulp out of mangoes by making the hole on top of mango.

Once the pulp separated from seed and peel, add some water and extract full pulp out of the seed and its peel.

Put the pulp in the mixer jar and run it for 2 minutes to make it smooth. The consistency will be thick but juicy.

Take the juice out of the mixer jar into a big bowl.

Add milk into it to make the consistency little watery. You can run the milk into same mixer jar with mango pulp and mix the milk well with the mango pulp.

After mixing the milk properly with mango pulp, taste it and add the sugar as required because its already having the sweetness of the mangoes.

Aamras is ready. Now let's get started with our last item for today i.e Poori (Deep Fried Flour Bread)

Ingredients :

  1. Wheat Flour : 500 Gms
  2. Salt : As required
  3. Oil : 1 Tablespoon - To add in the dough
  4. Oil : For frying
  5. Water : To make the dough

Process

Take the wheat flour in a wide bowl. Add some oil and salt and make tight dough. Cover the dough and keep aside for 30 minutes for resting. I prepared the dough earlier only when I was preparing Aloo Sabji.

Make the small - small round balls with the entire dough.

Roll the dough ball with the help of rolling pin into a thin small round. The size of the round should not be very big.

Heat the oil in a deep pan to deep fry the pooris. Check the hotness of the oil by putting the very small dough ball into it.

Once the oil is hot, put one poori into the oil to fry. Press the poori with the help of slotted spoon. It will cook and eventually puff up to make a round. When the one side of the poori will turn golden, flip it to cook it from the other side also. Once its cooked from both the sides and turns golden brown remove it from the oil and add another poori. Put one poori at a time.

Repeat the same process and make all the pooris.

Our pooris are also done and our food is ready to serve.
