Pumpkin seeds are definitely nutrient dense beyond the vitamin/mineral/macro-nutrient content they also have some potentially useful phytonutrients.
I grew pumpkins for the fall, but got them in the end in the ground a bit too late so we mostly got pumpkin leaves and blossoms. I'll likely grow some in early spring when the soil warms up enough.
