There’s not many I’ll absolutely skip, especially when an opening has gags hidden in it. A Sister’s All You Need (2017 Silver Link partial satire comedy about Light Novel authors) is one that taught me to pay attention to several of them with its naked main character in one random frame and a narration showing up partway in another one without any logical reason (across two different episodes, mind you).

I haven't watched anime for a long time so I wouldn't know how to answer your question haha I only know that SNK's openings used to catch me quite a lot 👌👀
