Pan smoking in anticipation. With a hiss, marbled flesh meets cast iron and rich aroma releases. A flip reveals the perfect sear. Heat lowered as butter and rosemary infuse each morsel. The internal heat is optimum. Remove. Rest. Salt. Pepper. To finish? A drizzle of extra-virgin olive oil of course!
