I think the current understanding in quantum physics is that decoherance (collapse of the wave function) does not necessitate a mind (observer, human) but happens when particles interact with other particles, bigger structures, that could be a measuring device but also something else. The question remains of course whether our reality is real at all, because we are experiencing everything through our mind, but that's more a philosophical question. Everything could be an illusion or a computer simulation for example (simulation hypothesis). What do you mean by the mirror behavior of photons? Do you mean entangled particles? One explanation why there must be some sort of "spooky" information transfer between entangled particles is in the video linked above.
