Yes! In almost all parts of Venezuela there are hiking options, the most famous routes are in the Andean mountains, in the capital that has a huge mountain and in the south of the country where the incredible tepuis (tabletop mountains) like the Roraima are located :)
Wow! The Inca Trail must be extraordinary! I don't know Peru yet but I know it has a lot of options for hiking :)
