They do get snow, but they get even more rain. The advantage of a steeply pitched roof is a superior resistance to inclement weather. Rain has less of a chance to get in, and the roof dries a lot faster. Also, you get much more room under the roof for comparatively little cost, as opposed to tacking on another floor. Often there is no need for extra dormers thanks to the steep angle. (Getting light under the roof can be tricky.)

This roof style is actually so typical for the region, it is referred to as an Old Franconian roof. The style is also seen in many French villages, so some call it the Old French roof.

In regions with a lot of snow the roof is typically pitched less steeply, in order to prevent the uncontrolled sliding down of snow masses. It is actually more advantageous to keep the snow on the roof; it helps with insulation, keeping the houses warmer.

And I strongly agree with you! A steep roof design hits 2 birds with one stone. First, its exterior surface deflects more rain, dries moisture faster, and has a more weather-resistant effect. Second, its interior (space under the roof) allows the accommodation for an attic that could function as a bedroom, den, home theater, storage area, etc. Moreover, accumulated snow left on rooftops that are angled less and acts as an extra insulating material for the house, is also a smart way to prevent the cold from freezing the inside temperature.

@wulff-media I was hoping that you would impart your knowledge on the subject. Thats very interesting and makes a lot of sense. Especially in terms of the rain. I know that a lot of roof tiles in Europe are clay and that they absorb some water, especially when they get a little older. Having the water run off quickly is smart so that there is less absorption. Thanks for clarifying
