Man, I am jealous that you can just free-write everything. For me, the process of creating a text is always a mess and I need to structure my ideas properly before getting into serious business. If I do not do this, all my ideas are scattered and hard to understand or missing a red thread. Thank you for your advice!

Free writing isn't for everyone, but it is good to do sometimes. It is cathartic also - it helps process the world of thought and feelings :)
One thing you can do to bridge the gap though, is to break down what you want to say into logical headlines and then, freewrite the content of each, that way it is structured and makes sense, but still has freedom of thought.
