To start our galinhada, selecting the right chicken is crucial. Ideally, you should use galinha caipira, a free-range chicken, for an authentic flavor. However, if that's not available, regular chicken will suffice. For this recipe, I’m using a combination of chicken drumsticks and thighs, both boneless and skinless, ensuring that we have juicy, tender meat in our dish. To add richness, I incorporate fresh sausage, which I believe elevates the overall taste – although crispy bacon is another delicious alternative that you might prefer.
