Part 4/9:
An often-overlooked ingredient—dried shrimp—is ground into a powder pattern reminiscent of secret ingredients used by authentic street vendors. Despite their pungent smell, they impart a signature depth of flavor that's "worth venturing out for."
The Art of Stir-Frying
The cooking process demands technique. The host heats a large wok over medium-high heat, starting with vegetable oil. The chicken is cooked in batches until golden and cooked through, then set aside.
In the same wok, dried shrimp are stir-fried until fragrant and toasted to perfection. The process continues with shallots, garlic, and optional zakkai (Thai salted daikon), which adds another layer of flavor. Each ingredient gets its moment, stir-fried to release maximum aroma and flavor.
