Ethiopian cuisine is rich and varied, with spices and peppers playing a fundamental role. The Merkato, despite losing some prestige, still offers visitors access to a multitude of fruits and spices, particularly at the Chola market, where Enset—a unique staple made from banana tree trunks—is processed for consumption.
Culinary traditions are reflected in their famous rituals, especially regarding the preparation of coffee, which remains a community-centered task. Tomoca, a coffee establishment dating back to 1953, is a testament to the cultural significance of coffee drinking in Ethiopia, where freshly roasted coffee brings people together.
