Some farms still adhere to the traditional practice of hand-picking coffee cherries. However, in larger operations, the rapidity and efficiency demanded by modern practices necessitate advanced machinery. Specialized harvesting machines equipped with vibrating rods can swiftly and efficiently collect ripe cherries, shaking them from the branches without damaging the plants. This technique allows farmers to harvest up to 60 bags of cherries in just five hours.
The Transformation of Coffee
Once harvested, the cherries are swiftly transported to the wet mill, where they commence their transformation within eight to twelve hours. The cherries undergo initial sorting through a gravity separator, where ripe cherries sink to the bottom while unripe ones float to the surface.
