We began harvesting our storage crops in mid-September. Coincidentally, our family vacation to Hawaii had been planned for early October, providing a refreshing break amid the busy harvest schedule. This allowed crops such as potatoes to be harvested in phases, benefiting from a three-week curing period before returning them to storage.
As the frost approached, we prioritized harvesting sweet potatoes, learning timely strategies for digging them up to avoid damage. Harvesting resulted in four bins, weighing between 150 to 200 pounds, which we cured by laying them in a single layer in the cool basement, allowing their skins to thicken and blemishes to heal.
