Surprising Findings: Age Doesn't Guarantee Cleanliness
One of the most startling revelations was that the age of the boards did not directly correlate with cleanliness. For instance, a four-year-old board was relatively clean, registering minimal bacterial presence, while a newer two-year-old board harbored over 7 million bacteria, including E. coli and biofilm-forming bacteria. The key factors influencing cleanliness appeared to be the physical condition of the board—particularly the depth and number of cuts—and storage practices, such as keeping boards moist or unventilated.
