People often imagine sausages are made from a mix of all animal parts – ears, tails, hooves, and even heads — especially for pork. However, a seasoned butcher clarifies that typical sausages contain only specific parts: for pork, mainly shoulder and back fat; for chicken, boned thigh meat; and for beef, cuts like chuck. Interestingly, only the casings made from intestines are natural animal parts in some sausages.
