The final touch for this simple and fresh mix comes from one clove of garlic, grated or chopped finely, and one and a half tablespoons of extra virgin olive oil. Season your mixture with salt and cracked black pepper to taste, and combine all the ingredients in a bowl. Let this sit in the fridge for about 30 minutes to allow the flavors to infuse, although it can also be served immediately if preferred.

You will need 250 grams of assorted mushrooms (Swiss Browns and oyster mushrooms work beautifully). For preparation, quarter the Swiss Brown mushrooms and leave the smaller oyster mushrooms whole.
