Marinating the Pork
Begin by flattening the pork pieces lightly with a mallet to facilitate even cooking. Season both sides generously with salt and black pepper. Allow the pork to rest on a plate for 15 minutes to let the flavors penetrate.
Preparing the Potatoes and Onions
While the pork is marinating, slice 4 potatoes into pieces and season them with salt, black pepper, a dash of paprika, and a drizzle of olive oil. Toss everything together in a bowl to ensure even coating.
Next, take 2 large onions and cut them into sizeable slices. These will add great flavor to the kebabs.
