Cocoa powder and cinnamon (amount to taste)
Sauce:
4 cups of water
½ cup masa harina
For the Enchiladas:
Flour or corn tortillas
Medium cheddar cheese
Cooking the Beef
Start your culinary adventure by adding the Chuck roast, chipotle chiles, garlic, onion, crushed tomatoes, and spices to your pressure cooker. Pour in 4 cups of water and cover the cooker. Set it to high pressure and cook for 40 minutes.
Once the cooking time is up, be sure to release all the steam before opening the lid. The aroma will be incredible! Carefully remove the beef and strain the broth—set both aside.
Now, shred the beef using two forks, making it tender and easy to roll into your tortillas later.
