Return to the pressure cooker and set it to sauté mode. Skim the top of the broth to remove excess oil, then add the broth back into the pot. Gradually incorporate the masa harina, whisking as you pour to ensure it dissolves thoroughly.
Allow this mixture to simmer for about 2 to 3 minutes until it thickens. Don't forget to taste and adjust the seasoning as needed!
Assembling the Enchiladas
In a separate pan, heat a little oil over medium heat and lightly fry each tortilla for about 10 seconds on each side—this will make them pliable and ready for filling.
Take each tortilla and add a generous amount of the shredded beef mixture, optionally including some chopped onions and a sprinkle of cheese. Roll each tortilla tightly and secure it seam-side down on your serving plate.
