  1. Add shredded meat (pork, beef, or chicken) to the chili sauce, mixing it well. Allow the mixture to cook for about 15 minutes until all flavors combine, then set it aside to cool.

Making the Masa

Next, we will prepare the masa.

  1. Take 8 lbs of plain masa preparada, which should only contain water. Combine it with baking powder and salt in a mixing bowl.

  2. Slowly incorporate the rendered fat into the masa by mixing lovingly and folding inward. Aim to introduce air into the mixture for a fluffier texture.

  3. Add the reserved chili sauce and mix well, followed by 3.5 cups of broth. Continue mixing until the masa’s texture becomes light and fluffy.
