  1. A quick test for readiness: take a spoonful of masa and place it in a cup of water. If it floats, it’s ready. If not, keep mixing!

  2. Allow the masa to rest for 20 minutes before assembling the tamales.

Assembling the Tamales

With your masa good to go, you can start the assembly process.

  1. Soak corn husks overnight and feel for the soft side. Spread the masa on the husk like butter.

  2. Place your meat filling in the center and fold the husk over the filling, securing it tightly.

  3. Continue this process with the remaining masa and filling until all are assembled.

Cooking the Tamales

  1. Place your tamales upright in a steamer pot, cover them, and steam for 1.5 to 2 hours.
