Cooking the Chicken
Preparation: Slice the chicken in half. Drizzle with avocado oil and season with salt and black pepper on both sides.
Cooking: Heat oil in a pan over medium-high heat. Cook the chicken for about 3-4 minutes per side until fully cooked. Once done, remove from heat and let it rest.
Shredding: After a five-minute resting period, shred the chicken using two forks or hands.
Assembling the Baked Chilaquiles
- Prepare the tortilla chips: Lightly spray the dehydrated tortilla pieces with avocado spray and bake at 375°F (190°C) for approximately 3 minutes.
