Final Proofing and Baking
The enriched dough goes into special panettone papers designed to hold its bulky shape. After covering, it needs a second rise—again taking about 1.5 to 2 hours. Once it's risen nicely, gentle egg washing ensures a polished look as it prepares for baking.
The baking procedure begins with a high temperature of 400°F (200°C) for the first ten minutes, followed by adjustments to ensure the crust is golden without burning. The entire baking duration spans about 35 to 40 minutes.
