Bake the Simnel cake at 325°F (approximately 160°C) for about an hour. Given its density, it will take time to cook through, but the aroma will fill your kitchen as it becomes a lovely golden brown.
Decorating the Simnel Cake
Once your cake has cooled completely, it’s time for the fun part: decorating. Start by spreading a thin layer of strained apricot jam over the top of the cake to serve as an adhesive for the marzipan. Roll out another layer of marzipan and gently place it over the cake, smoothing out any imperfections.
Now, take the marzipan balls you made earlier and press them onto the marzipan layer, spacing them out evenly to represent the apostles. Brush the entire top with an egg wash to give it a beautiful glaze.
