To start, you’ll need a quarter sheet pan (a larger half sheet can be used if you're serving more). Make sure to grease the pan with some oil or spray to prevent any sticking. Begin by covering the bottom of your pan with corn tortilla chips.
Next, toast the chips in an oven preheated to 375°F for about five minutes. This step enhances their crunchiness and flavor. Once toasted, it’s time to load them up:
Cheese: Sprinkle about three-quarters of a cup of Monterey Jack cheese over the chips.
Chicken: Use about a cup to a cup and a half of shredded rotisserie chicken.
Green Chilis: Add half a can of green chilis, drained to keep the chips from getting soggy.
White Beans: Scatter about a cup of white beans over the top.
