For the stuffing, combine the chopped spinach, finely diced bell peppers, sundried tomatoes, and grated onion in a bowl. Then, mix in room-temperature cream cheese (making it easier to blend) and Parmesan cheese, or any cheese of your choice. To spice things up, don’t forget to add some Cajun seasoning to this mixture. Stir everything until well combined before moving on to the next step.
Stuffing and Securing the Chicken
Now it’s time to stuff the chicken breasts! Generously fill the pocket with the prepared mixture. To prevent the stuffing from falling out during cooking, use toothpicks to secure the openings, making sure to cut them short enough to avoid burning but long enough to hold the stuffing.
