While the rice cooks, preparation of the ingredients for the fried rice is next. Begin by finely chopping shallots. Their mild sweetness balances perfectly in the dish, and it helps if these pieces are cut into sizes comparable to a cooked grain of rice. Similarly, mince garlic slightly finer than the shallots.
Once you have chopped the shallots and mincing the garlic brings tears to your eyes, allow the rice to complete its cooking and let it steam with the lid on for an additional 10 minutes.
Next, slice the green onions thinly, using the entire vegetable from the green tips to the white bottoms. Prepare two whole eggs, separating an additional yolk to add richness to the fried rice.
