1 cup granulated sugar (200g)
2 teaspoons lemon zest (this will enhance the blueberry flavor)
Mix until light and fluffy, usually about 2 to 3 minutes. Crack 2 eggs into a small bowl to check for shells before adding them to the butter mixture, one egg at a time, mixing well after each addition. For additional flavor, don’t forget to incorporate 2 teaspoons of vanilla extract.
Next, alternate adding the flour mixture with ½ cup of milk. Start with one-third of the flour, half of the milk, another third of the flour, the remaining milk, and finish with the last third of the flour. Scrape down the bowl and mix until just combined.
