Next, take a medium-sized bowl and crack in four eggs. Add two tablespoons of butter or margarine, along with one cup of sugar. These ingredients can be mixed using a hand mixer, or if you prefer, they can all go into a blender for a quick blend. Aim for a light mix at this stage.
After incorporating the main ingredients, add a pinch of salt to enhance the cake’s flavor. Then, fold in 50 grams of grated coconut, followed by another source of fat—two tablespoons of oil. Gradually introduce two cups of all-purpose flour into the mixture. Don’t forget to include 200 ml of coconut milk, or substitute with regular milk if you prefer.
