In your casserole dish, pour in some chicken stock and heavy whipping cream, followed by uncooked orzo pasta. The type of orzo matters, with recommendations to use 12 ounces for lower-quality pasta and 16 ounces for higher-quality brands, as they behave differently while cooking. Mix in the chopped spinach and cherry or grilled tomatoes, creating layers of flavor.
Don't forget the cheese! Combine half of your mozzarella and parmesan cheese with the rest of your ingredients, followed by the minced garlic and the juice from a fresh lemon.
Add salt, fresh pepper, and dried oregano to taste before finally folding in your chopped chicken.
