Next, preheat your oven to 425°F (220°C). While it heats, take your corn tortillas and generously spray both sides with oil. This step is crucial as it helps them crisp up during baking. Spread half of your shredded cheese across the tortillas before dividing the chicken mixture evenly over them. Finally, top with the remaining cheese.
Baking to Perfection
With the prepared tortillas on a baking sheet, place them in the oven for about 10 to 12 minutes. You’ll know they’re ready when the cheese is melted, and the edges are golden and crisp.
As soon as they come out of the oven, use a spatula to fold each taco gently. This helps prevent them from breaking when you’re ready to eat.
