Next, you’ll want to heat a large non-stick skillet over medium-high heat before adding a splash of olive oil. Once the oil is shimmering, place the fish into the skillet, starting with the top side down. The cod needs to sizzle undisturbed for about three to four minutes. A handy tip is to use a splatter guard to keep the stovetop clean and neat during this process.
The Searing Process
After three to four minutes, check if the fish is golden brown on the first side. If it is, it should release easily from the pan. Carefully flip the fish and then reduce the heat to medium. Continue cooking for another two to four minutes. The fish is done when it reaches an internal temperature of at least 145 degrees Fahrenheit. Once cooked, transfer the cod to a plate for later use.
