Considered Spain's national dish, paella is a culinary masterpiece perfect for sharing, traditionally served straight from the pan. The origins of paella date back to the farmers of Valencia in eastern Spain, who would cook it in the fields using local rice and whatever ingredients were available to them. This necessity of resourcefulness has led to numerous variations of paella across the country, but a fundamental rule in Valencia remains: never combine fish and meat in the same dish.
