With all the components prepped, Canel fetches the chilled patties from the fridge. Depending on the size of your cooking space, you can cook two to four patties at once. He emphasizes the importance of not overcrowding the pan to allow for optimal browning. Canel uses a spatula to smash the patties down firmly, even recommending the use of a can of beans for additional pressure if you prefer.
