With the beef prepared and stuffed, it’s time to sear them. Heat a stainless pan over medium heat, adding a touch of olive oil before placing the braciola inside. Sear for about two minutes on each side until they acquire a nice caramel brown color.
After searing, transfer the braciola back to the simmering sauce. The meat will continue to enrich the sauce with its flavors as it braises. Cover and let it cook for one to two hours, checking for doneness along the way.
Final Touches and Serving
After the braciola has braised to perfection, carefully remove the pieces and let them rest. Check the sauce's consistency and adjust with additional water or wine if needed.
