Drain the tomatoes. While they often come packed in oil, it’s best to drain the sundried tomatoes to avoid excess grease.
Blend the ingredients. In a food processor, combine the sundried tomatoes with olive oil (about ½ cup), and add the basil. Blend until smooth, adjusting the consistency with olive oil as necessary.
Fold in the cheese. Finally, add the grated cheese, mixing thoroughly. Taste and adjust seasoning if needed.
This dip is versatile and can be served with toasted baguette slices, pita chips, or even fresh vegetables.
