Combining Ingredients
Once the potatoes are cooked, drain the excess water and transfer them into a mixing bowl. Use a fork to mash the potatoes into a smooth purée. Add the sautéed carrots, chopped parsley, mozzarella cheese, and a pinch of salt. Mix all these ingredients thoroughly until you achieve a homogeneous mixture.
Forming Potato Balls
Now, take small portions of this mixture and roll them into rounded balls using your hands. This step sets the stage for the frying process.
Preparing the Batter
In a separate bowl, combine 3 eggs, 3 tablespoons of wheat flour, and 2 additional tablespoons of mozzarella cheese. Mix everything well until you have a consistent batter.
