Throughout grinding, temperature is carefully monitored and maintained below 70°C to prevent oil separation and preserve flavor. Optional ingredients such as salt, sugar, stabilizers (like hydrogenated or palm oils), and emulsifiers are added at this stage to enhance taste, texture, and shelf stability. For crunchy peanut butter, coarsely chopped peanut pieces are incorporated after the fine grinding stage.

Vacuum Mixing and Degassing

All ingredients are blended in vacuum mixers, which facilitate thorough mixing while removing air bubbles. Once mixed, the peanut butter is cooled to between 38°C and 49°C and passed through degassing chambers. This vacuum treatment eliminates entrapped air, reducing the risk of spoilage and preventing bubbles in the final product.
