Part 2/6:
Herbs and Lemon
Fresh parsley, a key herb in the dish, is prepared with a tip: use the stems when cooking—such as in meatballs or sauces—but remove them for finishing dishes like this, where clarity of flavor is essential. The zest and juice of a lemon are incorporated, adding brightness to the dish—about two to four tablespoons of lemon juice along with the zest are used to elevate flavors.
Garlic and Spiciness
Garlic is a fundamental ingredient, typically sliced thin, but quantity is flexible—seven or eight cloves are featured, which should satisfy garlic lovers. The cook demonstrates a preference for a medium-low heat to gently toast the garlic and chili flakes, ensuring the garlic turns golden without burning, which would impart bitterness.
