Next is a plant-based twist on the traditional North African and Middle Eastern shakshuka. This dish is also baked in the oven, making it incredibly easy to prepare. It starts with a baking dish filled with diced tomatoes, chopped bell peppers, onions, minced garlic, and minced chili peppers—spice levels can be adjusted to taste.
Flavoring is enhanced with tomato paste, smoked paprika, cumin, coriander, olive oil, and salt. After mixing, the dish is baked for approximately 30 minutes.
