The final baked good is Cowboy Cookies, a hearty one-bowl recipe packed with flavor and textures reminiscent of the rugged American West.
Ingredients and Preparation:
Combine ⅔ cup margarine, ⅔ cup packed brown sugar, and ½ cup granulated sugar. Whip with a hand mixer or a fork.
Mix in ⅓ cup applesauce (or vegetable oil), 1 tbsp ground flaxseed, 2 tsp cinnamon, vanilla, baking powder, baking soda, and a pinch of salt.
Add in 2 cups all-purpose flour, 2 cups rolled oats, 1⅓ cups shredded coconut, ¾ cup vegan chocolate chips, and 1 cup chopped pecans.
Scoop with a tablespoon or quarter cup, shape into balls, and flatten slightly.
Bake at 350°F (180°C) for 12-15 minutes until golden.
