Methods for draining tofu include:
Using a tofu press (if available)
Placing the tofu between plates and applying weight for about 15 minutes
Squeezing gently with hands over the sink (personal favorite for convenience)
Once drained, cut the tofu into bite-sized pieces suitable for each recipe. To achieve crispy exteriors, coating the tofu with a mixture of cornstarch (or substitutes like arrowroot or potato starch), salt, and spices plays a crucial role. The cornstarch helps create a satisfying crunch, whether baked or pan-fried.
