Recipe 1: Tofu Veggie Skewers with Vegan Tzatziki
Ingredients & Preparation
Tofu & Veggies: Cubed extra firm tofu, sliced sweet potatoes, red onions, zucchini, bell peppers, cherry tomatoes
Marinade: Olive oil, lemon juice, oregano, thyme, basil, salt, black pepper
Dipping Sauce: Homemade vegan tzatziki made with plant-based yogurt, garlic, grated cucumber, dill, lemon juice, olive oil, salt, pepper
Steps:
Soak wooden skewers in water for 15 minutes to prevent burning.
Drain and press tofu. Toss in cornstarch and spices.
Mix marinade ingredients and set aside.
Thread tofu and evenly cut veggies onto skewers, alternating for visual appeal.
Brush with marinade and bake at 400°F (200°C) for 25-30 minutes or until golden.
