In a food processor, combine the dates, two tablespoons of coconut oil, and a tablespoon of water. Blend until smooth and sticky, stopping occasionally to scrape the sides. Add the roasted pecans and a pinch of salt, then pulse again, but keep some small pieces for texture.
Transfer the mixture into a bowl. Mix in the cacao powder and chopped chocolate until everything is evenly incorporated. If you don't have a food processor, simply mash the dates with a fork until smooth and combine with chopped pecans and other ingredients manually.
