To assemble, steam the tortilla briefly in the microwave wrapped in a damp paper towel—this softens it, making it easier to fold without cracking. Spread cheddar on one half of the tortilla, then Oaxaca cheese, followed by hot, seasoned chicken strips. Top with a bit more Oaxaca to act as glue, then cover with another layer of cheddar.
Fold the tortilla and press gently to compact the filling. Avoid adding extra oil—since the cheese and fats in the chicken will keep everything moist. Place the assembled quesadilla onto a hot griddle or pan, pressing with a weight for even contact.
