To prevent sticking, coat the sheets with semolina flour, which creates a light barrier. For a traditional touch, instead of using a machine cutter, the pasta is shaped with a "chitarra"—a traditional Italian tool resembling a guitar. Roll out your pasta sheet, place it onto the chitarra, and cut into even strands that mimic artistically crafted spaghetti. Coating the freshly cut pasta with semolina again keeps it from sticking as it awaits cooking.
