The dredging setup includes two bowls: one for the wet mixture and the other for the dry coating. The wet dredge contains a single egg mixed with a splash of water until it appears milky, while the dry dredge combines rice flour, all-purpose flour, potato starch, a pinch of baking powder, and the remaining seasoning blend. To improve crunch, a few spoonfuls of the leftover marinade are added into the dry mixture, which, when mixed by hand, creates small, crispy crumbs that will turn into flavorful, crunchy bits during frying.
